Job Description
The Sr. Manager, Global Menu Food Technologist - Poultry is a key leadership role responsible for driving innovation and development of poultry-focused menu items across global markets. This role leads cross-functional collaboration to create, test, and commercialize new products that align with McDonald’s brand standards, operational capabilities, and consumer expectations. The ideal candidate will be a subject matter expert in poultry and food science, with a strong foundation in R&D, sensory evaluation, and commercialization processes.
Responsibilities
Development
- Maintain a strong understanding of McDonald’s operating systems, product standards, and supplier processes.
- Investigate and validate poultry menu items that are safe, consistent, operationally feasible, align with brand standards and meet all critical taste standards.
- Design laboratory and confirmation (scale-up) experiments to evaluate the impact of formulation and operational variables on key product attributes such as taste, texture, appearance, etc.
- Conduct research focused on food safety, shelf life, sensory performance, yield improvement, and process optimization. Define product specifications and establish acceptable attribute ranges based on process capability.
- Partner with Global Supply Chain and Quality Systems to support commercialization efforts (i.e. supplier approvals, target identification and ingredient compliance with local legislation) across the system.
Innovation and Improvement
- Stay current on global food trends, technologies, and processes to identify innovative opportunities across multiple product categories, including poultry, baked goods, meats, dairy, and produce.
- Develop targeted product concepts that address strategic menu needs, serving as a key contributor and liaison on the Global Sensory Team.
- Assess and apply industry technologies to enhance product quality, operational efficiency, and consumer appeal, in nline with McDonald's menu needs.
- Collaborate with cross-functional partners-including Supply Chain Management, Nutrition, Quality Systems, RSG and AOW Menu Leads-to implement improvements and drive innovation.
- Challenge existing operational platforms and processes to unlock new capabilities and support strategic menu needs.
Qualifications
- Bachelor’s or advanced degree in Food Science, Poultry Science, or a related field.
- Proven experience in product development across multiple food categories (e.g., poultry, beef, bakery, dairy, coatings).
- Strong understanding of food processing, ingredient functionality, and sensory science.
- Demonstrated ability to develop process-capable functional specifications.
- Excellent communication skills with the ability to translate technical concepts for diverse audiences.
- Experience working with global suppliers and navigating regulatory compliance.
- Strong project management, problem-solving, and data interpretation skills.
- Ability to work independently and collaboratively across all levels of the organization.
- Culinary knowledge and appreciation for the intersection of science and food experience is a plus.

Salary Range
Salary Range: $129,800.00 - $165,490.00
